Kitchen Time: Protein Pretzel Bites

Easy Protein Pretzel Bites

Warm, soft, and perfectly golden — these protein pretzel bites are a healthier twist on the classic snack. Using just Greek yogurt and self-rising flour as the base, this recipe is simple to make and packs extra protein into every bite. Finish them off with a quick baking soda dip, a brush of melted butter, and a sprinkle of pretzel salt for that authentic pretzel shop flavor.


Ingredients

  • 1 ½ cups self-rising flour

  • 1 cup plain, nonfat Greek yogurt

  • ½ cup boiling water

  • 1 tablespoon baking soda

  • ½ cup butter, melted

  • 1 tablespoon pretzel salt


Instructions

  1. Preheat the oven to 425°F. In a stand mixer fitted with the dough hook, combine self-rising flour and Greek yogurt. (Or just mix by hand with a rubber spatula!)

  2. Mix and knead on low until combined, then medium speed for about 3 minutes, until a dough ball forms. (If the dough is sticky, add a little more flour as needed.)

  3. Shape the dough: Turn onto a floured surface, knead gently a few times, and form into a ball. Cut into four wedges.

  4. Roll each wedge into a rope and slice into about 12 small pieces.

  5. Prepare the soda bath: Dissolve baking soda in boiling water. Dip each dough piece into the mixture, then place on a parchment-lined baking sheet.

  6. Bake for 7–10 minutes, or until pretzel bites are golden brown.

  7. Finish: Brush with melted butter and sprinkle generously with pretzel salt. Serve warm with Saucified Hot Honey Mustard or Classic Ranch.
